Curried Turkey Salad
1/4 cup mayonnaise (lowfat, nonfat both okay)
1/4 cup yogurt (lowfat or nonfat works better than full-fat)
1 tablespoon apricot jam or mango chutney or orange marmalade or similar (optional)
2 teaspoons curry powder of your preferred hotness
1/8 tsp salt or to taste
black pepper to taste
1/2 pound cooked turkey cut into 1/2" cubes (if buying at deli, ask for a single 1/2" thick slice). Can substitute chicken.
1 tart green apple, cut into 1/2" cubes (does not have to be peeled)
1 cup seedless grapes, or 1 cup raisins; could experiment with other chopped dried fruit
1/2 cup chopped walnuts or pecans
1. In a serving bowl, combine mayonnaise, yogurt, jam, and spices.
2. Add rest of ingredients.
3. Stir until well combined.
