Beef with Bananas

By request, here's my receipe for Beef with Bananas. Actually, it's for Veal with Bananas, but I've only ever made it with beef. And I leave out the onions and use onion powder because I don't like the texture of onions. And I add cayenne and use more ginger than it says. But anyway.

This receipe is from The African Cookbook by Bea Sandler, p. 182 (in the appendices). It's an old cookbook, which I purchased at the Smithsonian some years ago; it's one of those intended for American audiences, and provides various substitutions for ingredients, menus for a common meal in various countries, and the like.

Beef with Bananas

Saute 1 cup chopped onion; 1 TBSP curry powder; 1 TSP salt; 1/4 TSP pepper; 1/4 TSP ginger in 2 ounces butter until light brown. (I add cayenne here, too, and/or some of my hot African pepper.)

Add two pounds cubed beef (1 inch cubes) and saute for 10 minutes.

Add 1 pound tomatoes cut into 1 inch wedges and 1 cup water; simmer 30 minutes.

Add four peeled and sliced bananas (2 inch chunks) and simmer 15 more minutes, or until the beef is cooked.

Serve with rice and braised cabbage.
